Cream of Tuna Noodle

This is similar to Tuna Noodle Casserole, but without breaded crumbs on top, but you could always add that if you want. This is a nice and smooth meal and fairly simple to throw together. You may want to experiment with the amount of water you use. I've had varying results.

Ingredients

  • Approx. 1 Cup Half a box of Spiral Noodles
  • 1 8oz Can Cream of Mushroom Soup
  • 1 Can Water
  • 2 Cans or 2 Pouches Tuna
  • 1 tsp Cilantro
  • 1 tbs Garlic
  • Couple Dashes Salt & Pepper

Directions

Makes approximately 2-3 servings. Approximate preperation time: 20 minutes. Boil noodles on the stove or in the microwave until they are almost fully cooked (8-10 minutes), then add in the Cream of Mushroom Soup and the water, and all of the other ingredients along with any other items you want. Some hot sauce might be a good addition if you like spicey food. Cook on medium/high for about 7 minutes or until it is no longer soupy and has some consistency to it. Then let it sit for three to five minutes and you're ready to serve.

Italian Curry

Italian Curry

This is a spicy sauce that I created somewhat by accident because of lack of ingredients (and not knowing what I was doing). The sauce can be used on different items. I've had it on rice and spaghetti noodles so far. This sauce comes out very spicy depending on what type of red curry paste that you use. I recommend countering the spiciness a bit by mixing in some regular spaghetti sauce then use that on noodles. You can change the amount of each ingredient or even substitute ingredients as you like to fit your needs. It's a very flexible recipe.

Ingredients

  • 1 8 oz Can Tomato Paste
  • 1 1/2 Cans Water
  • 2 tsp Red Curry Paste
  • 1 tbs Cilantro
  • 1-2 tsp Garlic
  • 2-3 tbs Ranch Dressing
  • Couple Pinches Salt
  • A Splash Lemon Juice

Directions

Makes approximately 2 cups worth. Mixed all of this together until you get an even consistency then cook it as you wish with whatever you think sounds good.

Salsa

Salsa

Salsa, a wonderful and classic appetizer great for many of a ocassions. Of course, salsa can be prepared in many ways so this shows a couple ways you can go about it. As with most of my creations this salsa mix is very flexible and can be made as a mild, medium, hot, or ouch. I do not use measuring devices generally when I cook so the following measurements for the ingredients are approximations so just keep that in mind. Salsa is fairly forgiving when it comes to proportions so don't worry to heavily about getting just the right amount in. Ingredients with a * next to them are necessary to make a salsa, while the others are optional.

Ingredients

  • 2 cans 14.5oz *Diced Tomatoes
  • *Peppers (Pick one of the following)
    • 2-3 [Mild] Bell peppers
    • 2, 1 [Medium] Bell peppers, Jalepeno pepper
    • 1, 2-3 [Hot] Bell pepper, Jalepenos
    • 1, 2 [Ouch] Bell pepper, Habenero peppers
  • 3 tbs *Onion
  • 2 tsp Ground Coriander
  • 1 tbs Cilantro
  • 2 tsp Chinese 5 Spices
  • 2 tsp Garlic
  • 3 tsp Vinegar
  • 1 tbs Lemon Juice
  • 1 tsp *Salt
  • 1 tsp Chamomile leaves
  • 1 tsp Peppermint leaves

Directions

Well essentially all you need to do is mix all of your ingredients together and ta-da. The peppers you can dice and slice as you find appropriate. If you like your salsa thin and more even I recommend using a blender to mix everything. Otherwise you can mix everything in a bowl. From here you can either eat it as it is, or you can put it into a pan and heat it up a bit. I think it lets the ingredients mix together a little more and helps with texture, but it may actually do nothing in reality, I'm no chef. If you heat it on the stove use a low to medium setting and stir ocassionally, it will probably spit at you so watch out. You can have a bag of tortia chips nearby as you cook so you can taste test the salsa as you go.

Veggie Chili

A vegetarian chili with a little more emphasis on the vegetables. This is a simple little recipe that can be done on the stove top or the microwave. I find the standard vegetarian chili at the grocery store a little bland so I like to spice it up a bit and add some good flavors. I use corn and green beans to add flavor, but you can use other vegetables lying around in the fridge like bell peppers, tomatoes, potatoes, etc. Let your creativity lead you and get rid of some of that extra food taking up space.

Ingredients

  • 1 can Vegetarian Chili
  • 1/4-1/2 cup Green Beans
  • 1/4-1/2 cup Corn
  • 2 tsp Onion
  • dashes - tsp Hot Spices (whatever you like)
  • 2 dashses Cilantro

Directions

Makes approximately 3 servings. If using frozen corn and green beans, cook those first until hot. Then add onion and other spices followed by the chili. Stir it up good then heat till hot stirring occasionally. Enjoy.
