Amaretto Chicken
Ingredients
- 4-6 chicken breasts, boneless, skinless
- 1/2 cup flour
- 1 tsp Madras curry powder
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp vegetable oil
- 1 can cream of mushroom soup
- 1 can or jar mushrooms (4 ounces or more, or use fresh)
- 1/4 cup Amaretto
- 1 tsp Gravymaster or Kitchen Bouquet
- 2 tbsp lemon juice
Directions
Mix flour, curry powder, garlic powder, salt, and pepper in a plastic or paper bag. Add chicken breasts (rinsed and patted dry) and toss to coat. Brown quickly in hot vegetable oil over medium high heat. Transfer to Crock Pot. Mix remaining ingredients and spoon over chicken. Cover and cook on Low for 6-8 hours. Serve with rice. Serves 4-6.
Broccoli Rice and Chicken
Ingredients
- 2 lbs chicken tenders or boneless chicken breasts
- 1 1/4 cups uncooked converted rice
- 1 pkg cream of broccoli soup mix
- 1 1/2 cups chicken broth
- pepper, to taste
Directions
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on Low for 6-8 hours.
Chicken and Rice in a Bag
Ingredients
- 3 lbs chicken parts
- 2/3 cup water
- 1 cup raw converted rice
- 1 package dry onion soup mix
- 1 can cream of chicken soup
Directions
Rinse chicken and pat dry. Set aside. Combine rice, soup, and water in Crock Pot; stir well to mix in soup. Place chicken in a roasting bag; add dry onion soup mix. Shake bag to coat chicken well. Puncture 4-6 holes in bottom of bag. Fold top of bag over chicken and place in Crock Pot on top of rice. Cover and cook on Low for 6-8 hours, until chicken is tender and rice is done but not mushy.
Chicken in a Pot
Ingredients
- 2 carrots, sliced
- 2 onions, sliced
- 2 stalks celery, cut into 1-inch pieces
- 1 whole boiler/fryer chicken, 3-4 lb.
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 cup water, chicken broth or white wine
- 1/2 tsp dried basil
Directions
Put carrots, onions and celery in bottom of stoneware. Place whole chicken on top of vegetables. Sprinkle with salt and pepper and add liquid over top. Sprinkle basil over top. Cover and cook on Low 8-10 hours (High 3.5-5 hours, using 1 cup water). Remove chicken and vegetables with spatula.
Chicken Rice Casserole with Green Beans
Ingredients
- 1 cup uncooked rice, converted
- 2 boneless chicken breasts
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 2 soup can water (or part white wine)
- 1 pkg dry onion soup mix
- 1/2 tsp paprika
- Suggested Vegetables
- 1 large carrot, sliced
- 1 cup of fresh or frozen cut green beans
- 1 medium green bell pepper, chopped
- 1 can corn, drained
Directions
Place rice in bottom of crockpot. Pour water over rice. Mix canned soups and dry soup mix in a bowl, pour over top of rice. Add chopped veggies, your favorites. Place chicken on top. Sprinkle with paprika. Cook on Low for 4.5-6.5 hours.
Herbed Turkey Breast
Ingredients
- 1 (4-5 lb) turkey breast fresh or thawed
- 2 tbsp butter or margarine
- 1/4 cup garden veg-flavored whipped cream cheese
- 1 tbsp soy sauce
- 1 tbsp fresh minced parsley
- 1/2 tsp dry basil leaves
- 1/2 tsp rubbed sage
- 1/2 tsp dry thyme leaves
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
Directions
Place turkey in stoneware. Combine remaining ingredients and brush over turkey. Cover and cook on Low 10-12 hours (High 5-6 hours).
